Pancake Day 2020 is rapidly approaching, but if you have particular dietary requirements or are on a health kick, the traditional recipe for pancakes may be out of the question.
These alternatives are still easy, and some of the best out there, but the change in ingredients could mean you are free to treat yourself without feeling guilty. If you use a hand mixer or blender to combine the dry ingredients with the wet, then it will also speed up the whole process.
Vegan Egg-Free Pancake Batter
Makes 6 pancakes
You will need:
- 125g gluten-free plain flour
- Egg replacement, equivalent to 1 egg
- 2 tbsp water
- 250ml milk alternative (we like coconut or oat)
- Sunflower oil, for frying
Method:
- Transfer the flour into a bowl and make a well in the centre. Pour in a quarter of the milk
- Mix the egg replacement with the water, then add to the flour well. Use a whisk or mixer to combine the ingredients together
- Add another quarter of milk and mix, then when it is lump free use the rest of the milk
- Heat the oil in a small frying pan and pour a layer of batter into the pan. Cook for around a minute each side until golden
- Serve with toppings of choice – vegan chocolate spread or some fresh fruit and lemon works well
Gluten Free Pancake Recipe
Makes 12 pancakes
You will need:
- 250g gluten-free flour
- 2 eggs
- 500ml milk
- Butter, for frying
Method:
- Pour the flour into a bowl, and then create a well in the centre
- Add the eggs and a quarter of the milk, then combine
- Once smooth, add the milk in further quarters and keep mixing
- Heat a small frying pan, then add the butter. Pour in a small layer of batter mix and cook until golden on each side for a few minutes
- Repeat with remaining mixture and then serve with filling or topping of choice
Keto Cream Cheese Pancakes
Makes 3 small pancakes
You will need:
- 60g cream cheese
- 2 large eggs
- 2 tbsp coconut flour
- 1 tsp lemon zest
- Oil, for frying
Method:
- Combine all of the ingredients in a bowl until smooth
- Heat the oil in a small frying pan and pour in some batter, so each pancake is around 4 inches across
- Cook until both sides are golden and serve with sugar-free syrup
Protein Pancakes
Makes 8 pancakes
You will need:
- 2 tbsp ground flaxseeds
- 6 tbsp water
- 300ml soya milk
- 200g quinoa flour
- 2 medium bananas, mashed
- Oil, for frying
Method:
- Mix the flaxseeds with the water and leave to soak while you do the rest
- Put the milk, flour, bananas and a pinch of salt in a blender and add the flaxseeds once thick and gloopy. Blitz until smooth and thick
- Heat the oil in a frying pan and add batter to pan. Each pancake should be a tablespoon of batter
- Cook for a few minutes each side until browned. Pile high and serve with fruit compote and greek yoghurt
Oatmeal Pancakes
Makes 12 pancakes
You will need:
- 150g all-purpose flour
- 40g rolled oats
- 2 tsp baking powder
- 310ml milk
- 1 egg
- Vegetable oil, for frying
Method:
- Combine flour, baking powder, oats and a pinch of salt in a large bowl
- Combine egg, milk and oil in a separate bowl, then add to the dry mixture and combine thoroughly
- For each pancake, use around 60ml. Heat the oil in a pan and pour in batter one at a time. Turn when the batter is bubbling, and outer is golden
